Our story began in France, a country where Japanese food has become part of everyday life. In Paris, sushi restaurants, ramen shops, izakayas, and Japanese bakeries are now everywhere. For many French people, Japanese food is no longer something distant or unfamiliar. It has become a regular craving: fresh fish, clean flavors, rice prepared with care, soy, sesame, yuzu, miso, and that unique sense of balance that makes Japanese cuisine so special.
This connection between France and Japan is not new. The two cultures have always shared a deep respect for craftsmanship. In France, we value technique, seasonality, presentation, and the pleasure of eating well. In Japan, food is also treated with precision, respect, and simplicity. Japan has long been inspired by French pastry. From elegant cakes to refined desserts, French pâtisserie has a strong place in Japan. In France, sushi grew massively in popularity from the 2000s. Many restaurants opened across Paris and other cities, making sushi accessible to a wider audience. Some were traditional Japanese restaurants, while others were opened by Asian entrepreneurs, including Chinese restaurateurs living in France, who played an important role in making sushi widely available. The result was clear: French customers loved it.
For us, this cultural mix became part of our identity. Central Sushi is not about copying Japan. It is about respecting Japanese cuisine while expressing it through a French eye for quality, balance, and presentation.
